Spring is finally here and this lemony risotto is the perfect light and tasty dinner for those longer spring evenings as we make our way in to summer! I picked this recipe up in Italy, and we all know the Italians aren’t playing when it and it is quick and easy and you don’t need to be a Master Chef to make it.

Prawn, Chilli & Rocket Pasta
If you want something quick for dinner which tastes like you spent hours putting love and attention in to it, then this is the recipe for you.
Roasted Sweet Potato & Leek Soup
This is one tasty little number. Its simple to make and simply gorgeous! The sweet potato crisps to garnish just take the whole dish to another level so I definitely recommend making them. The best part is if you don’t use them all on the soup you have a tasty low fat snack for later. This soup is syn free, dairy and gluten free 🙂
Tomato & Basil Soup
Tomato and basil soup, it is a bit of a classic. I have tried so many different variations of this soup but the basics are always the same. The most important thing is to get good tasty tomatoes. If your tomatoes taste like sawdust then you might as well not bother.
Beetroot & Basil Soup
I think I am slightly in love with this beetroot and basil soup, it honestly tastes as good as it looks. The sweetness of the basil compliments the earthiness of the beetroot perfectly. They are kinda like Chandler and Monica getting together in Friends, you never really thought about them being together before but when they do get together you just know they were meant to be.. If you’ve never tried roasted beetroot before or not sure if you like it, this is the recipe that is going to make you a convert!
Tarragon & Lemon Roast Chicken
The Sunday Roast. A British Classic. However the Roast Chicken gets a bit of a bad rap. Its not always as exciting as lamb or beef and lets face it, we have all had a roast chicken which is bland, tasteless and dry. It doesn’t take a lot of effort to transform your every day bland roast chicken to a taste explosion that will make you feel like there is a party in your mouth… too far? you get the point.
Celeriac & Apple Soup
Celeriac is a wonderfully versatile vegetable and is also a great low carb alternative, it also tastes amazing with apple which is why I love this recipe so much. If you have never tried celeriac before or are sitting there thinking, apple? in a soup?! Give this recipe a go and I hope to change your mind. Its gluten free, dairy free and syn free so what more could you want?
Spicy Crab Cakes
These spicy little crab cakes are absolutely bursting with flavour but at the same time so lightly and delicate that they wont leave you feeling sluggish afterwords. I have made this recipe diary and gluten free as well as syn free, so perfect for anyone on Slimming Word or just watching their waistlines. Continue reading Spicy Crab Cakes
Bacon, Butternut Squash and Sage Risotto
This is one of my favourite risotto recipes but I have to admit I usually make it with ladles full of butter and cheese making it the ultimate comfort food, however, I have adapted the recipe to make it a little lighter on the hips for all of us trying to loose the extra pounds we piled on over Christmas but it is still bursting with all the flavour.
Butternut Squash Soup
I absolutely love soup this time of the year, its quick, easy, versatile and jam packed full of goodness which usually means its easy on the hips and this recipe for me is one of my favourites. Continue reading Butternut Squash Soup
